I've heard that internal flights in Ecuador, from Quito to Cuenca, eg., book up quickly during December. Does anyone have input on this? I don't want to book this far in advance and would rather be a bit more flexible during the one month I'll be in the country.

If you are here a week before the date of your flight there should not be a problem booking a flight. There are many flighs per day and several airlines: TAME, Aerogal, VIP, ICARO.
